A taste of tropical climes in Bolton at Caribmed

THE taste and smells ­â€" if not the tropical climate ­â€" of the Caribbean can be enjoyed right here in Bolton as a new diner, brings a flavour of the sundrenched islands to the town.

People are quite literally following their nose to Caribmed as delicious smell of jerk chicken leads them to a corner of Churchgate.

And there is more to the eat-in or take-out diner than meets the eye. For money raised through the new eaterie goes to help the most vulnerable.

Owners Stephen and Nora Ashton work with The Ark International Charity, supporting the most desperate, including victims of modern day slavery and of people traffickers.

The two secured accommodation to support the most vulnerable and provide a 'rapid response' service.

But needed to raise money to support their projects.

Stephen explained: "We struggled financially so we started to look at social enterprises.

" We opened the Revive furniture shop and Caribmed, as well as a community interest company with the revenue used to benefit the project we are currently running."

TASTY: Jerk chicken

Stephen said that opening of the diner was a 'dream come true' for him ­â€" with the menu drawing on his Caribbean heritage and his wife's Egyptian background.

He said: "This is really exciting we really wanted to bring Caribbean and Mediterranean vibe to Bolton and we are in a really quirky location.

"There is Hogarths, Taste of Greece and other bars and we thought a Caribbean and Mediterranean spot would be great. We want to blend the flavours of the two and also bring the culture of music, dining, laughing and conversation."

He added: "This area has got a Camden, Covenant Garden feel, all you need is some street art.

"I think this area has been quite hidden for a while but I think it is coming back again."

On the menu is traditional curry goat, traditional jerk chicken with the couple's own special sauce.

There is also Barbagiuan chicken and Caribmed is putting together an Antiguan salad. Delicious Jamaican pates are also served along with ribs and wings and much more.

"I absolutely love doing this," said Stephen, "It was my dream, many years ago to actually have a takeaway/restaurant and we are actually living that dream. The recipes come from my mother and my wife's family"

He added: "We have been getting great feedback. We are getting good reviews and this is helping fund a vital service which is the main thing."
